Tomato extract has the characteristic sweet and sour flavor of tomato, slightly sweet and sour fragrance. Its water-soluble components, such as vitamin C and certain polyphenolic compounds, can be dissolved in water; while fat-soluble components, such as lycopene and certain flavonoids, are not easily soluble in water, but more easily soluble in organic solvents, such as ethanol, acetone and chloroform.
